Kocha actually means red in Japanese. This Japanese tea is made using the same delicate leaves that are processed to make many famous Japanese green teas, but with the added oxidation process of a red or black tea. This well kept secret of Japanese tea production has actually been going on for centuries. At its peak, the Japanese exported 8,500 tons of black tea in the 1950s. This tea is dark and rich with delicate undertones of fruit.

Preparation

Place a heaping spoonful in a paper or bamboo tea filter in your mug or pot. Pour water just off the boil. Steep for 1.5 minutes. Two infusions.
